How Much Frozen Quorn Mince to Replace Beef Mince

A tasty vegetarian Quorn Bolognese, perfect for a meat-free weeknight dinner. Easy, quick and oh so tasty!

This is a regular and much requested meal on #meatfreemonday's in our household. Even hubby, who absolutely loves his meat happily munches away!

The benefit of using Quorn mince is that it can be cooked from frozen, so I always keep a family sized bag in my freezer ready to pull out for quick and easy dinners like this.

This easy Quorn Bolognese is also PACKED FULL of nutrient-rich hidden veggies, so it's a great recipe for fussy eaters too! It's also low in fat and high in fibre.

🥘 Ingredients

Ingredients for Quorn bolognese.
  • Quorn Mince - 300g of frozen Quorn mince.
  • Olive Oil - for frying
  • Onion - white onion chopped finely.
  • Garlic - 2 cloves, peeled and chopped
  • Carrot
  • Celery
  • Courgette
  • Herbs - a combination of rosemary, thyme, oregano and bay
  • Vegetable Stock
  • Passata - or use a tin of chopped tomatoes instead.
  • Red Pesto
  • Tomato Puree
  • Marmite - just a teaspoon helps bring out the savoury flavour of the dish.

🔪 Instructions

One: Finely chop the onion, garlic, carrot, celery and courgette. Heat the oil in a shallow casserole and cook the vegetables on a medium heat for 3 minutes until they start to soften.

Two: Add the herbs and give everything a good mix.

Three: Stir the frozen Quorn mince into the pan and stir frequently for a minute to break up any clumps.

Four: Add the passata, vegetable stock, tomato puree, red pesto, and marmite to the pan and mix in.

Five: Simmer for 20-25 minutes on a low to medium heat stirring often.

Six: Season and serve with vegetarian hard cheese and chopped basil.

💭 Top tips

  • Keep a family sized bag of Quorn mince in your freezer to pull out at short notice. Quorn mince can be cooked from frozen so there is no need to defrost it first.
  • Use a mini chopper to chop the vegetables finely. It's the perfect way of getting vegetables into fussy eaters.

🍴 Serving suggestions

Serve the Quorn bolognese with spaghetti, or the pasta of your choice, and a side of garlic bread or pesto focaccia.

Leftovers are delicious on a jacket potato, or why not stir them through cheesy pasta before it's baked to make a Quorn bolognese cheesy pasta bake?

📖 Variations

  • Up the veggies by adding chopped peppers and baby spinach to the bolognese.
  • Make it spicy by adding 1 chopped red chilli at the same time as the onion.
  • Add a glass of red wine just before you add the Quorn mince.
  • Make it in your slow cooker (cook on low for 6 hours).

🥡 Storage

The cooked bolognese can be stored in the fridge for up to 3 days. Reheat in the microwave until piping hot.

The Quorn Bolognese can also be frozen for up to 3 months. Defrost fully in the fridge before reheating.
